Oyster & lemon velvet

Chilled brine, bright acid, a soft mineral finish.

A quiet beginning: cold-caught brine folded into silk. Lemon oil blooms, then fades into a clean line.

Charcoal endive, gold broth

Smoked edges, gentle bitterness, honeyed depth.

Char meets broth like a handshake. The endive yields bitterness that turns into warmth, then leaves a faint glow.

Field mushrooms & obsidian cream

Earth, velvet, and a dark finish that invites more.

Slowly caramelized mushrooms fold into cream. The result is grounded, dark, and clean—no heaviness, only presence.

Saffron lakefish & warm linen

Tender flake, soft smoke, saffron that lingers.

A fillet poached to tenderness, finished with faint smoke. Saffron threads through the broth like light through fabric.

Vanilla ember tart, sea-salt

Caramelized vanilla, thin salt, calm heat.

A tart with quiet sweetness. The finish is salted and warm, like a last breath near the candle.
